Oktoberfest Asian Rainbow Salad

The mustard adds a savoury tang that pairs beautifully with peanut butter, ginger and soy sauce. Serve it warm for dinner or chilled as a refreshing noodle salad—and don't overlook the leftovers, because they're even better the next day!
🥕 Salad Ingredients
3 cups finely shaved red cabbage (a mandolin works beautifully)
½ large carrot, finely julienned
1 large stalk celery, finely sliced
1 tbsp finely sliced sweet onion
Chopped fresh cilantro, to taste
150 g rice stick noodles, cooked according to package directions
🥜 Oktoberfest Mustard Peanut Dressing
⅓ cup crunchy all-natural peanut butter
1½ tbsp SNickelFritz Kitchens Oktoberfest Mustard
½ tbsp soy sauce
1 tsp freshly grated ginger
Pinch of garlic granules
2 tbsp hot water
👩🍳 How to Make Oktoberfest Asian Rainbow Salad
1. Prepare the vegetables
Finely slice or julienne the cabbage, carrot, celery and sweet onion. Add them to a large bowl along with chopped cilantro.
2. Make the peanut mustard dressing
Combine the peanut butter, Oktoberfest Mustard, soy sauce, fresh ginger, garlic granules and hot water in a microwave-safe bowl.
Microwave for about 20 seconds, then stir until the dressing is warm, smooth and creamy. If you'd like a thinner dressing, add a little more hot water.
3. Cook the rice noodles
Bring enough water to cover the rice noodles to a boil in a large Dutch oven or pot. Remove from the heat if directed by your noodle package, add the noodles and cook or soak according to package directions, usually about 8 minutes.
Drain well.
4. Toss it all together 🌈
Add the warm rice noodles to the prepared vegetables. Pour the warm Oktoberfest Mustard peanut dressing over the salad and toss thoroughly until the noodles and vegetables are evenly coated.
Serve immediately while warm, or refrigerate and enjoy it chilled.
