Classic Family Meatloaf - SNickelFritz Style

In our family, meatloaf was a suppertime staple. One of my Dad's favourites... 👨🍳
It’s an easy, make-ahead meal and the bonus is that you can throw in some baked potatoes to cook at the same time. And it has awesome options for leftovers! (Stay tuned!)
Our version uses Millie’s Chili Sauce both inside the loaf and brushed on top for a classic, gently tangy finish that brings everything together.
Ingredients
Meatloaf
• 1 small onion, finely chopped
• ½ red bell pepper, finely chopped
• ¾ cup panko breadcrumbs
• ½ cup whole milk
• 1 large egg, lightly beaten
• ½ cup Millie’s Chili Sauce
• 2 tsp salt (or to taste)
• Freshly ground black pepper, to taste
• 1½ lbs ground beef
Chili Glaze
• ¼ cup Millie’s Chili Sauce
• ¼ cup ketchup
Directions
Preheat oven to 350°F.
Lightly grease a 9 x 5” loaf pan with non-stick cooking spray.
In a large bowl, gently mix all meatloaf ingredients until just combined.
Turn mixture into the loaf pan and shape evenly.
Bake for 50 minutes to an hour.
Meanwhile, stir together the chili sauce and ketchup for the glaze.
Brush meatloaf generously with glaze.
Return to oven and bake another 20–25 minutes, until the internal temperature reaches 165°F.
Let rest for 5 minutes before slicing.
Notes
Serve simply with extra chili sauce for dipping, lots of butter and salt and pepper on the spuds. a favourite vegetable, and a fresh salad, this is comfort food at its best.
